I just made this recipe for a dinner with some friends this past weekend. Super easy to put together and the bag (double recipe) was gone in a couple hours
Pepitas, or pumpkin seeds, are one of those neglected nuts. Not many recipes call for them. They have a really nice rich nutty flavor, and the green color is a nice visual break from the standard nut brown.
This is not a super sweet recipe. I’ve added salt and a pinch of chili to balance out the sugar and give it more of a savory flavor. The chili is not over powering and gives a little zing on the back side after you swallow. I like to watch people when they first eat it to see the expression on their face at the end. lol
The sea salt flakes over the top give it a salty crunch that compliments the sugar and nuts. You can use any fleur de sal, but I like Maldon Sea Salt Flakes which are a reasonably priced finishing salt, and have a good soft salty taste. It’s also great on salads and meats. A nice finishing salt.
